Use your imagination and add chicken, fish,
prawns, rice... and why
not? some French white wine.
Ingredients(for
4 people)
3 potatoes
3 tomatoes
1,5 l water
2 tablespoons olive oil
2 onions
1 peeled clove of
garlic, cut in two
salt and pepper
4 toasted slices of
baguette (French stick)
2 tablespoons chopped fines herbes de Provence
(tarragon, parsley, chervil...)
Procedure
Peel the potatoes and cut them in two. Blanch the tomatoes for
15 seconds and peel them. Cut them in two parts. Put it all in a large saucepan
filled with water. Salt and pepper and bring to boil. Let it simmer covered for
1 hour.
Peel onions and chop them. Heat oil in a frying pan on medium
heat. Add onions and fry them for 20 minutes over low heat, without burning
them. Add one cup of water from the tomatoes and potatoes saucepan and simmer
for 15 minutes.
Puree the potatoes, the tomatoes and the onions in a
liquidizer. Add as much liquid as necessary from the stock to achieve the desired
consistency. Season it.
Peel the garlic and cut it in two. Rub it on the toasted slices of bread. Put
the slices on the bottom of bowls and add the soup.
How to Serve : Sprinkle the chopped fine herbs on the top.
Serve very hot, accompanied by toasted farmhouse bread.
