Coq à la bière
 

Beer is more common in the North of France, and this is a dish that fits right in.

Ingredients (for 6 people)

  • 1 rooster

  • 1/2 liter bier

  • 1 bouquet garni

  • 2 shallots

  • 500 g button mushrooms

  • 5 cl fresh cream

  • a walnut of butter
  • salt and pepper

Procedure

  1. Cut  up the poultry. Peel shallots and chop them finely.
     
  2. In a casserole, fry shallots using a walnut of butter. Add the meat chunks.
     
  3. Pour in the beer and add the bouquet garni, salt and pepper.
     
  4. Cook covered for 2 hours. After the first hour, add the washed and cut up mushrooms to the casserole.
     
  5. At the end of cooking, take out the meat and keep it in a warm place. Add fresh cream to the casserole and cook for a further 5 minutes. 

How to Serve :
 

Serve the meat with sauce and fresh pasta or other vegetables.
