A pastry with sweetened meat from a recipe by
Indian cooks who accompanied Lord Clive, governor of the Indies, who came and
settled in Pézenas in the 18th century.
Ingredients (for
4 people)
150 g flour
50 g softened butter
200 g lamb
1 grated lemon zest
2 spoons dry raisins
1 egg yolk
salt, pepper
Procedure
Mix the flour, softened butter and the egg
yolk on the counter. Knead slowly till you obtain homogenous pastry.
Let it rest for 2 hours under a cloth.
Hash the lamb. Salt and pepper, add the lemon
zest and hashed raisins.
Roll out the pastry over the counter. Butter 4
ramekins and put the pastry over them. Fill them with stuffing and
cover with remaining pastry. Firmly press the borders of the pastry and
brush the surface wish egg yolks.
Preheat the oven to 200 °C and bake for 30
minutes.
