Mussels and fries from Lille

Literally tons of mussels are consumed each year during the 2 day festive "Braderie de Lille" along with a 1/2 of beer.

Restaurants compete with each other to see which one can have the biggest pile of empty shells stacked up out front.

Ingredients (for 4 people)

  • 2 liters mussels from Bouchot

  • 50 cl dry white wine

  • 1 bunch of parsley

  • 4 shallots

  • 2 onions
  • 2 celery sticks
  • 1 clove of garlic
  • thyme and bay leaves
  • a knob of butter

Procedure

  1. Clean and remove their beards.
     
  2. Peel the onions and shallots and chop them finely. Peel and crush the garlic.
     
  3. Pour the mussels, onions, shallots and garlic in a pot. Add celery and parsley after you have carefully washed them. 
     
  4. Pour in the white wine.
     
  5. Cook over medium heat until the mussels have opened itself.

How to Serve :

Serve with French fries.
