Omelette comtoise
Filled with Comté cheese, topped with asparagus
this French omelette comtoise turns a regular breakfast into a festive occasion.

Ingredients (for
4 people)

8 eggs - 8 cooked asparagus sprigs

6 dried tomatoes, steamed and ground

2 diced ham slices
- 200 g Comte cheese
-
1 glass of milk
- 1 onion

2 tablespoons olive oil
- nutmeg

salt and pepper
Procedure
- Peel and chop the onions. Fry them until they become transparent
using olive oil in a skillet.

Grate the Comte cheese. Whisk the milk with eggs in a bowl.

Add ground tomatoes, ham, grated Comte and onion.

Salt and pepper. Sprinkle with grated nutmeg. Mix it all well.

Heat olive oil in an oven pan on the cooker. Pour in the egg mixture and cook for 5 minutes.

Place the asparagus on top of the dish and put in the oven for 15
minutes, so that the omelette rises.
