Le Bleu ("blue" in French) cheese from Auvergne
has a strong and rustic unique flavor. Other well-known "bleus" that vary from
nutty to tangy flavor that can be substituted are Roquefort, Gorgonzola or
Stilton.
Ingredients (for
4 people)
300 g puff pastry
200 g Bleu d'Auvergne
cheese
1 egg yolk
Bechamel sauce
Procedure
Melt while constantly stirring the Blue
d'Auvergne cheese in the Bechamel sauce.
Cut out two large rectangles of puff
pastry.
On the first layer of the pastry, spread the
blue sauce and cover with the other layer. Seal the edges by slightly
pressing them.
Using a brush, spread
the egg yolk over the surface.
Preheat the oven to 210°C.
Bake the tart for 5 minutes and them reduce
the temperature to 180°C and bake for an additional 10 minutes.
