Yes, in spite of its name, it's a very refined dessert, emphasizing
all the peach and lemon verbena flavors.
Ingredients (for
4 people)
6 white peaches
300 g granulated sugar
2 small sprigs of
lemon verbena
2 small sprigs of mint
Procedure
Pour 1 liter of water in a a saucepan; add
sugar and the herbs. When it boils put the peaches in the syrup. They
have to be well immersed in the water. Cook for about 20 minutes. Check
if they are cooked with a wooden pick.
Remove the saucepan from the stove and let
it cool down. Take the peaches out of the saucepan, remove the
sprigs of lemon verbena and mint. Keep this syrup.
Carefully peel the peaches. Mix two of them
in a food processor. Reduce the syrup for a few minutes and
add the two processed peaches to it. Cook for 2 minutes.
Serve 4 whole peaches on deep plates with the
syrup.
