This dessert with puff pastry with praline cream is named after the bicycle race between the 2 cities. It's shape is round... like bicycle wheels

Paris Brest puff pastry with praline cream is named after the bicycle race between the 2 cities

Ingredients (for 6 people)

  • 400 g fresh choux pastry

  • 500 g praline butter cream

  • 100 g sliced almonds

  • 1 egg yolk

  • a nut of butter

  • pastry bag

Procedure

  1. Butter an oven plate. With the pastry bag, pipe a ring of choux pastry. Make two concentric rings and a third one on top of them.
     
  2. Brush with egg yolk. Sprinkle with almonds and put in the oven for 20 minutes at 180°C.
     
  3. Cool the pastry down and cut in two halves.
     
  4. With the help of the pastry bag, fill the lower part of the pastry with the praline cream. Make little roses while doing this.
     
  5. Cover it with the upper part and put in the refrigerator.
     
  6. Dust with icing sugar and serve on a tray

How to Serve :

Serve with coffee.
