Burgundy Pancakes

An exquisite mixture of orange and lemon flavored crepe flamed with Burgundy brandy (you can try other liqueurs) makes for an exciting dessert.

Ingredients (for 4 people)

  • 3 eggs

  • 250 g flour

  • 50 cl milk

  • half a glass of beer

  • oil for frying
  • 100 g melted butter
  • 2 pinches of salt
  • 1 orange
  • 1 lemon
  • 6 sugar cubes
  • crystallized sugar
  • 1 Burgundy brandy

Procedure

  1. Mix the eggs with the flour. Add the salt, beer and milk very slowly. Let it rest a while.
     
  2. Oil a skillet. Fry the pancakes, which have to remain thin and well done.
     
  3. Wash the orange and the lemon. Rub 4 sugar cubes over the zest of orange and 2 over the lemon zest.
     
  4. Squeeze the orange juice and crush the 6 sugar cubes in the juice. Add melted butter.
     
  5. Soak the pancakes in this juice. Fold them in quarters and powder with sugar.
     
  6. Flame them with Burgundy brandy and serve immediately.
